The Six Tastes: Sunday lunch (or, is it Tuesday??)

In Ayurveda,  everything that can be digested is broken down into 6 tastes.: Sweet, salty, sour , bitter, astringent and pungent. This is what your body requires to get the full range of nutrients in order to function optimally at every meal. Each taste has an initial rasa (taste) virya(property of whether it is cooling or heating) and vipaka ( the post digestive effect on the body.) Once you are aware of this inherent quality in food and plant based medicinal herbs, you can balance your body and mind by reaching for the foods that will balance you. Feeling spacey, gassy and distracted? Reach for the heavy, sweet quality of a whole grain. Feeling heated, angry, hyperacidic? Then the cooling , bitter quality of greens are for you.

Here at Chamundi each meal includes a balanced representation of these tastes, perfectly illustrated in the weekly traditional lunch, kerala style.

Delicious and completely satisfying!
